Basic Demi Glace

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 1 quart brown stock (beef, veal)
  • 1 quart brown sauce

Recipe

  • 1 combine the stock with the sauce over medium heat.
  • 2 simmer until the mixture is reduced by half.
  • 3 strain and immediatly cool in a water bath.
