Amazing Beef Enchilada Casserole

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1 (1 1/2 ounce) envelope taco seasoning mix
  • 6 (6 inch) corn tortillas, divided
  • 3 cups shredded monterey jack cheese, divided
  • 1 medium red onion, chopped
  • 1 (10 ounce) can enchilada sauce
  • 2 green onions, sliced

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cook beef in a large skillet over medium-high heat, stirring until browned and crumbly.
  • 3 drain.
  • 4 add seasoning mix and stir.
  • 5 grease an 8-inch round casserole.
  • 6 place half of tortillas over bottom.
  • 7 layer with beef, 2 cups monterey jack and onion.
  • 8 place remaining tortillas over onion.
  • 9 pour enchilada sauce over tortillas.
  • 10 bake until tortillas are soft and juices bubble, about 35 minutes.
  • 11 layer remaining cheese over tortillas.
  • 12 bake until cheese is bubbly, about 10 minutes.
  • 13 top with green onions.
