Baked Rice

Ingredients
- Servings: 4
- 4 tablespoons butter, melted
- 1 1/2 cups rice, uncooked, can use brown
- 3/4 cup chopped onion
- 1/2 cup chopped green pepper
- 1/2 cup diced celery
- 1 (8 ounce) can sliced mushrooms, drained
- 1 (10 ounce) can beef consomme
- 1 (10 ounce) can water, from the beef consomme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon chopped parsley
Recipe
- 1 preheat oven to 350.
- 2 in a large bowl, mix all ingredients together. pour into a casserole dish.
- 3 cover and bake at 350 for about 1 hour, stirring and replacing cover halfway through cooking time.
- 4 mixture should be slightly brown.
