Basic Jambayala-sunday Supper @ Wpcrc

Ingredients

  • 18 lbs smoked sausage
  • 18 onions, chopped
  • 18 bell peppers, chopped
  • 54 celery ribs, chopped
  • 18 minced garlic cloves
  • 18 medium heads of cabbage (squash)
  • 1 gal. vegetable stock
  • 6 cups water
  • cans diced stewed tomatoes
  • can red beans, drained rinsed
  • can pinto beans, drained rinsed
  • 18 cups uncooked long-grain rice
  • 18 cups water
  • cumin, 2 tablespoon
  • dark chili powder
  • 3 tablespoons cajun seasoning, # 1111
  • salt and pepper, cajun seasoning

Recipe

  • 1 prepare in heavy 3 gallon stock pot.
