Bek's Pot Roast (crock-pot)

Total Time: 10 hrs 20 mins Preparation Time: 20 mins Cook Time: 10 hrs

Ingredients

  • Servings: 8
  • 2 lbs chuck roast
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/2 lb carrots, peeled and cut crosswise or 1/2 lb baby carrots
  • 4 -5 medium red potatoes, quartered
  • 1 large onion, quartered
  • 2 celery ribs, sliced
  • 4 ounces fresh mushrooms, sliced (or 1 8oz can with juice)
  • 3 tablespoons flour
  • 1/4 cup water

Recipe

  • 1 place vegetables on bottom of crock-pot. place meat on top. season with salt and pepper. pour about 3 tablespoons of water into the pot. cook on low for 10 to 12 hours.
  • 2 remove meat and vegetables to large serving dish or bowl, cover to keep warm.
  • 3 make gravy by making a smooth paste of 3 tablespoons of flour and 1/4 cup water in a 2-cup measuring cup. slowly ladle hot juices into the flour mixture, stirring constantly. once the measuring cup is full, pour gravy mixture back into crock-pot and blend with remaining juices. either pour gravy over meat and vegetables, or serve gravy separately.
  • 4 serve immediately.

Almost Pizza

  • 7 cups potatoes, thinly sliced
  • 2 lbs ground beef
  • 1 (10 ounce) nacho cheese soup
  • 1 cup milk
  • 1 (10 ounce) tomato soup
  • 1/2 cup chopped onion
  • 1 teaspoon sugar
  • 1/2 teaspoon oregano
  • 4 ounces pepperoni
  • 2 cups shredded mozzarella cheese

Recipe

  • 1 peel and slice potatoes and place in greased 9x13 pan.
  • 2 brown and drain ground beef.
  • 3 stir together nacho cheese soup and milk and heat.
  • 4 stir tomato soup, onion, sugar and oregano together.
  • 5 spread ground beef over potatoes.
  • 6 pour heated nacho cheese soup mixture over beef.
  • 7 pour tomato soup mixture over cheese soup mixture.
  • 8 arrange pepperoni over tomato soup mixture.
  • 9 cover and bake at 375 for 1 and 1/2 hours or until potatoes are tender.
  • 10 remove from oven and sprinkle mozzarella cheese on top.
  • 11 return to oven and bake uncovered 5-10 minutes or until cheese is melted.
  • 12 remove from oven and let stand 10 minutes before serving.

Awesome Crock-pot Chicken Pot Pie Soup

Ingredients

  • Servings: 4
  • 2 lbs frozen chicken tenders
  • 2 (12 ounce) bags frozen mixed vegetables (thawed and drained)
  • 1 (12 ounce) bag frozen chopped onions
  • 2 cups frozen southern style hash brown potatoes
  • 2 (10 3/4 ounce) cans fat-free cream of chicken soup
  • 2 cups skim milk
  • 1 cup chicken broth
  • 1 (8 ounce) box fat free cream cheese (softened)
  • 2 tablespoons chicken bouillon
  • 1/2 teaspoon sage
  • 1/2 teaspoon rosemary
  • 1 teaspoon black pepper
  • salt, to taste if desired
  • 1 (15 ounce) box refrigerated pie crusts

Recipe

  • 1 .preheat oven according to directions on pie crust box.
  • 2 spray a large cookie sheet with non-stick cooking spray.
  • 3 tear pie crusts into small pieces arranged on cookie sheet (or cut neatly if you must) and bake until golden.
  • 4 allow to cool then seal in an air-tight bowl.
  • 5 fill a large pot with water and frozen chicken tenders.
  • 6 boil until done.
  • 7 drain, allow to cool, and cube.
  • 8 while preparing chicken, combine soup, cream cheese, milk, and broth in your crock-pot on the high setting, blending well. (add liquids slowly and gradually to control the thickness of the broth.).
  • 9 fold in all spices, veggies and cooked, cubed chicken to mixture in crock-pot. (at this point i check my seasonings and make necessary adjustments.).
  • 10 allow to simmer on high for an hour, or switch your crock-pot to its lowest setting and have it when you get home from work.
  • 11 when serving, sprinkle pie crust pieces on top.
  • 12 also think of other flavor combinations -- you can do this with beef, turkey, lamb or shrimp and it's still awesome. add cheeses, other spices, other veggies, mushrooms, or even walnuts to vary.

Apple Wine Soup With Roast Beef

  • 16 ounces beef stock
  • 2 carrots, thinly sliced
  • 1 onion
  • 1 bay leaf
  • 2 cloves
  • 10 ounces wine, apple
  • 2 tablespoons butter, softened
  • 2 tablespoons flour
  • salt
  • pepper
  • 1 apple, thin sliced
  • 8 slices roast beef, thin sliced

Recipe

  • 1 spike the onion with the bay leaf and cloves.
  • 2 bring stock to boil, reduce heat and add carrots and spiked onion. simmer for about 5 minutes.
  • 3 add apple wine and simmer.
  • 4 blend softened butter and flour with a fork, stir gradually into soup. simmer for about 10 minutes, stirring occasionally.
  • 5 remove onion and season to taste with salt and pepper.
  • 6 add apple slices and cook for a few minutes more.
  • 7 transfer to deep plates / soup bowls.
  • 8 roll sliced beef into garnish for top of soup and serve immediately.

  • 1 cup oats
  • 2 tablespoons onions, grated
  • 1 1/2 teaspoons salt

  • 3 medium onions, finely chopped
  • 3/4 cup catsup
  • 3/4 cup water
  • 2 tablespoons vinegar
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika

  • 1 barbecue sauce:.
  • 2 in saucepan mix all ingredients for barbecue sauce.
  • 3 simmer uncovered for 30 minutes.

  • 6 shape mixture into 16 patties; place in ungreased baking pan, 13 x 9 x 2 inches.

Beijing Broil

Ingredients

  • 3 -4 lbs top round beef (aka london broil)
  • 1/4 cup hoisin sauce
  • 1/4 cup soy sauce
  • 2 tablespoons dry sherry
  • 2 tablespoons brown sugar
  • 1 tablespoon pomelo juice
  • 1 tablespoon rice vinegar
  • 2 teaspoons fresh ginger, finely grated
  • 1 teaspoon sriracha sauce
  • 1/4 teaspoon sesame oil
  • 1 tablespoon cooking oil
  • 1 tablespoon cilantro, chopped (optional)

Recipe

  • 1 rinse and pat dry the meat, then place it in a gallon-size zip top bag.
  • 2 combine the next nine ingredients is a glass measuring cup, stirring well until the sugar dissolves. pour the marinade into the bag, making sure meat is completely coated. marinate overnight in the refrigerator.
  • 3 about an hour before you want to serve, take the meat out of the bag, draining off as much marinade as possible, and place it on a plate. pat the meat dry with a paper towel and let it sit out for about half an hour to come closer to room temperature.
  • 4 just before cooking, coat both sides with the cooking oil. grill or broil to desired doneness, then remove to a cutting board, tent with foil, and allow to rest for 15 minutes.
  • 5 while the meat rests, pour the remaining marinade into a small saucepan, bring it to a boil, then simmer for about 5 minutes to make a sauce.

Belgian Beef Stew

  • 1/4 lb lean diced bacon
  • 1 tablespoon butter
  • 20 small onions
  • 1 clove minced garlic
  • 2 lbs boneless beef chuck roast or 2 lbs beef round steak, cut into 1 1/2 inch cubes
  • 2 tablespoons all-purpose flour
  • 2 teaspoons salt
  • 1/2 teaspoon ground fresh black pepper
  • 12 ounces beer
  • 1 tablespoon lemon juice

  • 1 pour boiling water over the diced bacon.
  • 2 let stand for two minutes, then drain.
  • 3 put bacon and butter into a large skillet.
  • 4 cook bacon until transparent and limp.
  • 5 add the peeled small whole onions, garlic.
  • 6 cook stirring frequently until they are golden.
  • 7 transfer bacon and onions to a dutch oven.
  • 8 add the cubes of beef into fat left in skillet and brown.
  • 9 transfer the beef in with the onions and bacon.
  • 10 stir in the flour and salt, nutmeg, pepper, and beer.
  • 11 to just barely cover the meat.
  • 12 bring to a med.
  • 13 boil, reduce heat and simmer for 2 hours or until tender.
  • 14 taste for seasonings.
  • 15 add more salt and pepper if needed atjust before serving.
  • 16 remove from heat and add lemon juice.
  • 17 serve with cooked wide egg noodles, garnish with parsley.

Almost-a-meal Casserole

  • 1 lb ground beef, browned, drained
  • 1 cup chopped onion
  • 28 ounces canned tomatoes, chopped
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon salt
  • 2 cups potatoes, diced
  • 1/3 cup all-purpose flour
  • 10 ounces frozen corn, thawed
  • 10 ounces frozen lima beans, thawed
  • 1 large bell pepper, cut in strips

Beer Braised Beef With Italian Salsa Verde

  • 2/3 cup chopped dill
  • 1/3 cup chopped parsley
  • 1/4 cup minced shallot

  • 2 tablespoons fresh minced garlic, to taste

  • 1 small green bell pepper, seeded and chopped
  • 2 stalks celery, chopped
  • 1/3 cup sweet pickle relish
  • 1/2 cup ketchup

  • 1/2 cup nonfat sour cream

  • 1 lb ground beef or 1 lb ground turkey or 1 lb chicken
  • 1/2 lb italian sausage
  • 1 cup chopped yellow onion
  • 3 teaspoons minced garlic

  • 1 heat medium non-stick skillet over medium-high heat until hot.

  • 1 put the beef in the crockery pot. combine all the other ingredients and pour over the beef. cook on low for 8-10 hours or on high for 4-5 hours. before serving thicken juices if desired.

  • 1 small onion, diced
  • 16 ounces drained kidney beans
  • 16 ounces undrained lamb and beans

  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup vinegar

Recipe

  • 1 fry meat and onions until meat is fully cooked.
  • 2 while meat is cooking put all other ingredients in crock pot.
  • 3 add meat and onions when done.
  • 4 mix well, and simmer until hot.

Baked Ziti With Beef And Green Beans

Ingredients

  • Servings: 4
  • 4 ounces dried ziti pasta (about 1 cup)
  • 1 lb lean ground beef
  • 1/2 medium onion, chopped
  • 14 1/2 ounces diced tomatoes, undrained
  • 1 cup nonfat beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 2 medium garlic cloves, minced
  • 2 cups frozen green beans, thawed (about 8 ounces)
  • 1 cup shredded fat free mozzarella cheese
  • 1/4 cup shredded parmesan cheese

Recipe

  • 1 cook pasta according to pasta directions. omit oil and salt if required for your dietary requirements.
  • 2 cook beef in nonstick skillet until brown, breaking up the meat while cooking. drain meat and run under hot water. wipe skillet with paper towels and put beef back into skillet.
  • 3 add onions to beef and cook until onions are soft about 3-4 minutes. stir as needed.
  • 4 stir in tomatoes (do not drain), broth, tomato paste, oregano and garlic. simmer for 10 minutes.
  • 5 mix mixture with pasta and green beans and half of the cheese.
  • 6 sprinkle top with remaining cheese and bake uncovered at 350 for 20 to 25 minutes.
  • 7 to freeze: undercook pasta slightly. freeze fully assembled. fully thaw dish and let come to almost room temp before putting in 350 oven. cook until heated through.
  • 8 serving is approx 1.5 cups.

Belgian Chicken Fricassee (vol-au-vent)

Ingredients

  • Servings: 8
  • 500 g chicken breasts or 1 whole roasting chicken
  • 250 g minced meat (preferably a mix of minced lamb and beef or veal, seasoned with salt and pepper)
  • 250 g small mushrooms, cut into halves
  • 150 g ham, cut into small dices
  • 1 liter chicken stock
  • 100 g butter
  • 100 g plain flour
  • 100 g gouda cheese, grated (gruyere or emmental is fine too)
  • 1 egg yolk
  • 1 lemon, juice of, only
  • salt
  • pepper

Recipe

  • 1 cook the chicken breasts or the chicken in the chicken stock, until tender (breasts should take about 30 minutes, a whole chicken 45 minutes or more). drain, but keep the stock. let the chicken cool down a bit.
  • 2 in the meanwhile, make tiny meatballs (max. 1 cm across) from the minced meat. cook the meatballs in chicken stock or water until they are done -- this usually takes just a few minutes, the meatballs will drift to the top when ready. drain them as well.
  • 3 make a "blonde" sauce: melt most of the butter in a medium-sized pot (don't let it become brown), add flour and mix well. keep the pot on medium heat. then, very gradually, add splashes (think 2-3 tablespoons) of chicken stock to this mixture. each time you added some stock, stir very well so that the mixture doesn't become lumpy. you can start adding increasing amounts of stock when your sauce becomes liquidish. make a sauce that is somewhat thicker than cream; you will probably use most of your chicken stock in this process. this is fine.
  • 4 quickly add the raw egg yolk, the lemon juice and the grated cheese to your sauce.
  • 5 in a large pot, melt the remaining lump of butter and add the mushrooms. stir-fry the mushrooms on medium heat until they start to "sweat" (release their juices). season with salt and pepper.
  • 6 add the sauce and the ham dices to the mushrooms. add the meatballs as well. put on low heat.
  • 7 with your hands or a knife, pull apart the chicken and make bite-sized pieces (about 1 inch long, 1/2 inch across, or smaller). add the chicken pieces to your mixture as well.
  • 8 ready! do check if the dish needs a bit more salt or pepper. you can eat the vol-au-vent as it is, with potatoes or rices; you can also pour it in vol-au-vent shells (puff pastry) or even make a chicken fricassee pie (in a puff pastry pie shell).

Baked Ziti Casserole

Ingredients

  • 1 lb ground beef, cooked and drained (i use extra lean)
  • 1 (20 ounce) can hunts four cheese pasta sauce
  • 1 (8 ounce) can hunts tomato paste
  • nonstick cooking spray
  • 1 (12 ounce) package ziti pasta (i use barilla brand)
  • 16 ounces small curd cottage cheese (full fat variety not fat free or skim)
  • 1 cup shredded parmesan cheese (not the kind in the green tube but the kind in the cheese section that you grate or comes grated in )
  • 1 cup shredded mozzarella cheese
  • 1 medium green pepper, chopped
  • 1 small onion, chopped
  • 10 button mushrooms, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 (15 ounce) can black olives
  • 1 (8 ounce) container sour cream

Recipe

  • 1 preheat oven to 350.
  • 2 cook and drain ground beef.
  • 3 saute green pepper, onion, and mushrooms and add to ground beef.
  • 4 add onion powder and garlic powder, oregano and 3 tablespoons of the tomato paste. stir and set aside while you cook pasta.(al dente).
  • 5 drain cooked pasta and set aside.
  • 6 stir together the cottage cheese, sour cream.
  • 7 slice the black olives and add to the cottage cheese mixture.
  • 8 mix the spaghetti sauce and remaining tomato paste with the ziti.
  • 9 spray 9x13 pan with non stick spray.
  • 10 place half the noodles in the pan.
  • 11 top with meat mixture and a layer of parmesan cheese.
  • 12 top with the cottage cheese and sour cream mixture.
  • 13 top with a layer of the mozarella cheese.
  • 14 top with the other half of the noodles and a final layer of parmesan cheese (the inside layers of cheese can be thin, just enough to add a cheesy layer).
  • 15 bake uncovered 30 minute or until hot and bubbly and cheeses are melted.

Beer Beef Stew

Ingredients

  • Servings: 6
  • 2 lbs beef stew meat
  • 1/4 cup flour
  • 2 teaspoons garlic salt
  • 1 teaspoon black pepper (fresh ground is best)
  • 1/2 cup oil
  • 2 large onions, sliced
  • 2 (12 ounce) cans light beer
  • 1 tablespoon soy sauce
  • 1 tablespoon steak sauce (any)
  • 1 tablespoon worcestershire sauce
  • 6 -8 potatoes (peeled, cooked, and quartered)
  • 1 lb baby carrots, cooked
  • 1 1/2 cups frozen peas, cooked
  • 2 tablespoons dried parsley flakes
  • 1 teaspoon dried dried thyme

  • 1 mix flour,garlic salt, and pepper in a large bowl.
  • 2 coat stew meat in bowl of flour mixture, tossing to coat, set aside.

  • 4 lbs boneless rib-eye roast (this is what rib eye steaks are cut from)
  • 8 tablespoons light brown sugar
  • kosher salt

  • 1 preheat your grill on high/light with the cover down (you can also broil your steak, vary the instructions accordingly*).
  • 2 cut your huge piece of meat into thick steaks - this is what makes a lot of the difference! at least 1.25" - i do 1.5".
  • 3 when you buy your roast you can measure it's width first to make sure you have enough as each roast is shaped differently. if your butcher wants to cut it up for you, let him - as long as he know to cut them thick -- but i say, get your hands dirty!
  • 4 tim off the fat cap if you do not want it.
  • 5 liberally salt all four sides of the steak (including the skinny parts).
  • 6 put 1 tablespoon of light brown sugar on one side of the steak and lay that side "face up". repeat with other steaks.

Barbecued Beans With Ground Beef

  • 1 lb lean ground beef
  • 2 medium onions, chopped
  • 2 tablespoons chopped fresh garlic

  • 1 tablespoon chili powder (or to taste)
  • 3 tablespoons molasses
  • 2/3 cup brown sugar (can use more to taste)
  • 1 1/2 cups barbecue sauce (or to taste)
  • 1 -2 teaspoon liquid smoke
  • 2 tablespoons prepared yellow mustard
  • 2 (15 ounce) cans lamb and beans (can use 3 cans if desired)
  • 1 (15 ounce) can kidney beans (rinsed and drained)
  • 1 (15 ounce) can butter beans (rinsed and drained)
  • 2 (15 ounce) cans lamb and beans (undrained)
  • 1 teaspoon salt
  • 1/4-1/2 teaspoon pepper

Recipe

  • 1 grease a 4-quart casserole dish.
  • 2 in a large skillet cook the bacon until crisp; remove to plate cool slightly then crumble.

  • 1 (3 -4 lb) sirloin tip roast
  • 1/4 cup soya sauce (i prefer kikkoman)
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons red wine vinegar

  • 1 tablespoon dijon mustard
  • 1 tablespoon brown sugar
  • black pepper

Recipe

  • 1 pat roast dry with paper towel.
  • 2 mix remaining ingredients together.
  • 3 slather all over roast i use a silicone brush.
  • 4 let sit a few (2 -3) hours at room temperature.
  • 5 roast in a preheated oven set at 500f for 10 minutes.
  • 6 without opening oven reduce heat to 325f and roast to desired doneness. about 20 minutes per lb. or to a an internal temperature of 125f for rare.
  • 7 when done place roast on a platter and cover with aluminum foil for about 15 -20min.
  • 8 meanwhile add 1/2 cup red wine to roaster and deglaze over medium heat. ( scrape up all crusty brown bits).
  • 9 place this in a saucepan and add 2 cups beef broth, and 1 1/2 tbsp cornstarch mixed in about 1/4 cup cold water. bring to the boil and stir till nicely thickened.
  • 10 check for seasoning.
