Barbecued Beef And Potato Casserole

Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 green peppers, seeded and chopped
- 8 green onions, thinly sliced
- 1 lb lean ground beef
- 2 tomatoes, chopped
- 1 cup barbecue sauce
- 4 large baking potatoes, thinly sliced
- 1 cup cheddar cheese, shredded
Recipe
- 1 heat oil in non-stick skillet.
- 2 add onion, garlic, peppers and green onions, and cook until onion is starting to brown.
- 3 add ground beef and cook, stirring occasionally until cooked through.
- 4 add tomatoes and season with salt and pepper.
- 5 add barbecue sauce and cook until all is well-coated. remove from heat.
- 6 preheat oven to 350ºf.
- 7 spray a large baking pan with cooking spray.
- 8 arrange alternate layers of potatoes, beef mixture, and cheese, ending with potatoes. (reserve 1/4 cup cheese).
- 9 cover with foil and bake 40 minutes.
- 10 uncover and top with remaining cheese.
- 11 bake, uncovered, until potatoes are cooked through, about 15 minutes more.
- 12 serve immediately.
