Erica's Delicious Slow Cooker Beef Roast

Ingredients

  • Servings: 4
  • 2 pounds boneless beef roast
  • 1 teaspoon vegetable oil
  • salt and pepper to taste
  • 1 onion, quartered
  • 16 baby carrots
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley

  • in a large skillet over medium high heat, saute the roast in the oil for 15 minutes, or until all sides are well browned. season with salt and pepper to taste and set aside.
  • place the onion, carrots, garlic and parsley in the bottom of a slow cooker. place the roast on top of the vegetables and pour the soup over the roast and the vegetables.
  • cover the slow cooker and cook on low setting for 8 to 10 hours, stirring once.
  • transfer roast to a serving platter and place the vegetables around it. pour the roast gravy from the slow cooker into a gravy boat.

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1/2 small head cabbage, cored and cut into strips

  • cook and stir ground beef and onion in a large skillet over medium heat until ground beef is browned and crumbly, about 10 minutes. drain excess grease.

  • 1 cup white cornmeal
  • 4 cups water
  • 1/2 teaspoon salt
  • 2 pounds lean ground beef
  • 1/2 cup chopped onion
  • 1/3 cup chopped green bell pepper
  • 1 (15 ounce) can whole kernel corn, undrained
  • 2 tablespoons chili powder
  • 1 tablespoon salt
  • 1/2 cup tomato sauce
  • 1 cup shredded cheddar cheese

Recipe

  • preheat oven to 350 degrees f (175 degrees c). lightly grease a 2 quart casserole dish.
  • in a saucepan, bring water to boil and add the 1/2 teaspoon salt. slowly add the cornmeal and cook over low heat for about 5 minutes, stirring constantly.
  • pour 2/3 of the hot cornmeal mush into a 2 quart casserole dish. using the spoon, bring it up the sides as far as it will reach. if mush is too thick to spread, add a little boiling water.
  • in a large frying pan, cook, but don't brown, the ground beef, breaking it up into crumbs as it cooks. add onion and green pepper and cook 5 minutes longer.
  • add corn (with its liquid), chili powder, salt and tomato sauce, heat until very hot and pour mixture into the casserole dish lined with cornmeal mush.
  • spoon remaining cornmeal mush over top. again, it should be thin enough to spread, but certainly not watery.
  • top with grated cheese and bake at 350 degrees f (175 degrees c) for 35 to 40 minutes, or until cheese is melted and browned.

  • 1 1/2 pounds ground beef
  • 1 cup dry bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 eggs

  • 1 (15 ounce) can tomato sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons vinegar
  • 1/2 cup white sugar

  • preheat oven to 350 degrees f (175 degrees c).

Pepper-crusted Beef Tenderloin With Chocolate- Sauce

  • 1 tablespoon cracked white peppercorns
  • 1 tablespoon olive oil
  • 1 tablespoon minced shallot

  • 1/4 cup beef stock
  • 1 teaspoon minced fresh rosemary
  • 1/2 (1 ounce) square bittersweet chocolate, chopped

  • 1 pound lean ground beef
  • 1 1/2 cups dry lentils, rinsed
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 3 cups water
  • 1 teaspoon salt
  • ground black pepper to taste
  • 2 cubes beef bouillon cube
  • 6 cups tomato-vegetable juice cocktail
  • 1 (4.5 ounce) can mushrooms, drained
  • 1 dash worcestershire sauce

Recipe

  • brown beef; break meat into small pieces while cooking. drain.

Dutch Leek Casserole

Ingredients

  • 2 pounds potatoes, peeled and chopped
  • 1/4 cup milk
  • 2 pounds leeks, chopped
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon finely chopped green chile peppers
  • soy sauce to taste
  • 1 (8 ounce) package shredded cheddar cheese
  • 6 ounces cooked ham, cut into thin strips

  • preheat oven to 350 degrees f (175 degrees c).
  • bring a large pot of salted water to a boil, and cook potatoes until tender but firm, about 15 minutes. drain potatoes, and transfer to a medium bowl. mash together with milk.

  • gently rinse liver slices under cold water, and place in a medium bowl. pour in enough milk to cover. let stand while preparing onions. (i like to soak up to an hour or two - whatever you have time for.) this step is so important in taking the bitter taste of the liver out.
  • melt 2 tablespoons of butter in a large skillet over medium heat. separate onion rings, and saute them in butter until soft. remove onions, and melt remaining butter in the skillet. season the flour with salt and pepper, and put it in a shallow dish or on a plate. drain milk from liver, and coat slices in the flour mixture.

Ingredients

  • 2 1/2 cups water
  • 2 potatoes, peeled and cubed
  • 1 tablespoon salt, or to taste
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1/4 onion, chopped
  • 1 cube beef bouillon
  • 1 tablespoon olive oil
  • 1/2 cup frozen mixed vegetables
  • 1 (10.75 ounce) can condensed cream of celery soup
  • 1/4 tablespoon dried parsley
  • 1/2 teaspoon onion powder
  • ground black pepper to taste

Recipe

  • in a large stock pot boil potatoes in water and add salt. cook potatoes until tender and soft and then add carrots, celery, chopped onions, vegetable of your choice, oil and beef bouillon. mix together and cook until all vegetables are soft.
  • add cream of celery soup and season with parsley, onion powder and pepper. if you desire a thinner type of soup you may want to add 1/2 cup of water.
  • heat soup through, stirring occasionally, and serve.

Fried Bologna Casserole

Ingredients

  • 8 slices bologna
  • 3 tablespoons butter
  • 1 onion, chopped
  • 4 cups warm mashed potatoes
  • 1 1/2 cups shredded cheddar cheese

Recipe

    Preparation Time: 10 mins Cook Time: 50 mins Ready Time: 1 hr

  • preheat oven to 350 degrees f (175 degrees c). grease a 1 1/2 quart baking dish.
  • heat a skillet over medium-high heat. fry the bologna slices in the hot skillet until browned on both sides, about 1 minute per side. drain on a paper towel-lined plate. wipe excess grease from the skillet, reduce heat to medium, and stir in the butter and onion. cook and stir until the onion has softened and turned translucent, about 5 minutes. stir the onions into the warm mashed potatoes.
  • spread half of the mashed potatoes into the prepared baking dish. layer with half of the fried bologna, and sprinkle with half of the cheese. repeat with the remaining ingredients.
  • bake uncovered in the preheated oven until the cheese is bubbly, and the center is hot, about 30 minutes.

  • 1 pound ground chicken
  • 1 cup dry bread crumbs
  • 3/4 cup crumbled blue cheese
  • 1 extra large egg
  • 1/4 cup onion, chopped (optional)
  • 1/3 cup buffalo wing sauce
  • 4 hamburger buns, split and toasted

  • 1 pound cubed beef stew meat
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 1 (6 ounce) can tomato paste
  • 1 (14.5 ounce) can low fat, low sodium beef broth
  • 1 cup chopped carrots
  • 3 potatoes, cubed
  • 1 sprig fresh rosemary
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/4 teaspoon crushed red pepper flakes
  • 10 ounces button mushrooms, quartered
  • 1 (10 ounce) package frozen green peas, thawed

  • 2 cubes chicken bouillon
  • 1 large onion, chopped
  • 1 3/4 pounds ground beef
  • 4 tablespoons tomato paste

  • ground black pepper to taste
  • 1/4 cup vegetable oil
  • 3/4 cup all-purpose flour
  • 3 cups milk
  • 1/2 teaspoon ground white pepper
  • 3 cups shredded mozzarella cheese

  • preheat oven to 350 degrees f (175 degrees c). grease a 9x13 inch baking dish.

  • heat 1 tablespoon oil in a large skillet. saute onion until golden and add ground beef. cook over medium heat until evenly brown. stir in tomato paste, salt and pepper; simmer over low heat until heated through.
