  • preheat oven to 375 degrees f (190 degrees c).

  • 3/4 cup all-purpose flour
  • 3 cups milk

christmas eve beef stew

  • 1 pound cubed beef stew meat
  • 1/4 cup canola oil, divided
  • 1 large onion, coarsely chopped
  • 3 cups beef broth
  • 1 (10.75 ounce) can fat free condensed cream of mushroom soup
  • 1 (10.75 ounce) can skim milk
  • 1 (8 ounce) can sliced mushrooms, drained
  • 2 tablespoons cornstarch (optional)
  • 1 tablespoon water (optional)

Recipe

  • in a large skillet, brown meat. remove the meat from the skillet.
  • in the same skillet used for the meat, saute onion, garlic, carrot and green onion. when the vegetables are tender, add tomato paste and seasoning salt. stir in browned meat.

  • 12 (8 inch) flour tortillas
  • 2 teaspoons vegetable oil
  • 8 ounces shredded colby cheese
  • 2 (19 ounce) cans enchilada sauce

  • preheat oven to 350 degrees f (175 degrees c).
  • in a heavy saucepan or skillet, brown the ground beef and onions. season the ground beef mixture with garlic salt and set aside.
  • in a skillet, fry the tortillas in vegetable oil. spoon some meat mixture and cheese into the center of each tortilla, roll them up and arrange them in a 9x13 inch baking dish or oblong pan. pour the enchilada sauce over the rolled enchiladas and top with any remaining meat or cheese.

  • cut a thick slice from the top of the loaf for a lid; use your fingers to pull the bread center out of the crust, leaving a thick shell. (save the removed bread for another use.)

  • 1 (4 pound) whole chicken

  • 1 teaspoon dried thyme
  • 2 carrots, cut in chunks
  • paprika to taste
  • 8 slices bacon
  • 2 cups beef broth

  • preheat the oven to 450 degrees f (220 degrees c).
  • rub butter over the entire chicken. season with salt, pepper and thyme. place the carrots inside the cavity, and tie the legs together. place the chicken breast side up in a roasting pan. lay bacon strips across the top of the chicken, and secure with toothpicks. sprinkle with paprika. pour the beef broth into the roasting pan - do not pour over the bacon.
  • roast for 15 minutes in the preheated oven, the reduce the heat to 350 degrees f (175 degrees c). baste with some of the broth. continue to roast for 1 hour and 15 minutes, or until the internal temperature is 180 degrees f (82 degrees c) when taken in the thickest part of the thigh. baste every 15 minutes with the broth.
  • remove the bacon and discard toothpicks. roast the chicken for 15 more minutes to brown the skin. transfer to a serving platter, and remove the ties. you may eat the bacon, but it is best to discard the carrots.
