Beer Braised Beef With Italian Salsa Verde

Ingredients

  • Servings: 4
  • 1 cup chopped mint
  • 2/3 cup chopped dill
  • 1/3 cup chopped parsley
  • 1/4 cup minced shallot
  • 3 tablespoons olive oil
  • salt and pepper
  • 1 lb beef stew meat
  • 2 tablespoons olive oil
  • 1/3 cup chopped onion
  • 1 cup beef broth
  • 12 ounces guinness stout

Recipe

  • 1 combine salsa ingredients and chill for one hour.
  • 2 season beef with salt and pepper and brown in 1 tbl. olive oil.
  • 3 remove beef from pan and saute onion in 1 tbl olive oil.
  • 4 add beef back to pan, along with broth and beer. bring to a boil.
  • 5 reduce heat to low and simmer 90 minutes or until tender. shred with a fork.
