Beer Braised Beef With Italian Salsa Verde

Ingredients

- 1 cup chopped mint
- 2/3 cup chopped dill
- 1/3 cup chopped parsley
- 1/4 cup minced shallot
- 3 tablespoons olive oil
- salt and pepper
- 1 lb beef stew meat
- 2 tablespoons olive oil
- 1/3 cup chopped onion
- 1 cup beef broth
- 12 ounces guinness stout
Recipe
- 1 combine salsa ingredients and chill for one hour.
- 2 season beef with salt and pepper and brown in 1 tbl. olive oil.
- 3 remove beef from pan and saute onion in 1 tbl olive oil.
- 4 add beef back to pan, along with broth and beer. bring to a boil.
- 5 reduce heat to low and simmer 90 minutes or until tender. shred with a fork.
