Beef Barley Soup...my Version

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 2 quarts beef stock or 2 quarts broth
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 teaspoon olive oil
  • 2 tablespoons minced garlic
  • 2 cups cooked pearl barley
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 2 bay leaves
  • 1/2 teaspoon black pepper
  • salt, optional (to taste)
  • 1 lb beef, already cooked (ground, shredded or chopped)
  • 2 (16 ounce) cans crushed tomatoes or 1 quart tomato juice

Recipe

  • 1 in stock pot or favorite soup pot add all ingredients (except barley). bring to a boil, reduce and simmer 45 minutes. add barley and simmer another 15 minutes.
