Beef Barley Soup

Ingredients

  • Servings: 8
  • 4 cups water
  • 1 (14 ounce) can beef broth
  • 1 (14 ounce) can tomatoes
  • 1 lb lean stewing beef, cubed
  • 1 cup cut green beans
  • 1 cup cubed parsnips or 1 cup potato
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 garlic clove, minced
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried thyme
  • 1 bay leaf

Recipe

  • 1 combine all ingredients, except peas, barley, salt and pepper in slow cooker. cover and cook on low for 6-8 hours, adding peas and barley during the last 20 minutes.
  • 2 discard bay leaf and season to taste with salt and pepper.
