Beef Barley Soup

Ingredients

  • Servings: 4
  • 3 1/2 cups water
  • 3/4 cup tomato sauce
  • 3/4 cup dried soup mix (mix of lentils, barley, split peas)
  • 1 beef bouillon cube
  • 1 carrot, diced
  • 1 potato, diced
  • 1 celery, chopped
  • 2 teaspoons dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lb cooked lean beef

Recipe

  • 1 in a large stockpot, combine water, tomato sauce, dried soup mix, bouillon cube, carrot, potato, celery and seasonings; bring to a boil. reduce heat and simmer, covered for about 1 hout. add beef. cook for 30 minutes longer.
