Beef Barley Mushroom Soup

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1/2-1 lb cubed beef
  • mixed vegetables
  • fresh mushrooms (sliced)
  • onion (chopped)
  • 1/8 teaspoon garlic (finely minced)
  • 1/2-3/4 cup uncooked quick-cooking barley
  • 1 -2 tablespoon beef base
  • water

Recipe

  • 1 place beef in a stock pan.
  • 2 pour enough water in to cover beef.
  • 3 simmer on low heat for about 1 hour.
  • 4 add all ingredients except barley.
  • 5 cover and simmer for about 1/2 hour.
  • 6 add barley and simmer for about 1/2 hour more.
  • 7 serve.
