Beef Ranchero Roll-ups

Ingredients
- Servings: 6
- 6 (8 -10 inch) flour tortillas, warmed
- 1 lb ground beef
- 1/2 medium onion, chopped
- 1 (14 1/2 ounce) diced tomatoes with green chilies
- 1 (15 ounce) can black beans
- 1 1/2 cups cheddar cheese, shredded
Recipe
- 1 warm tortillas in foil in oven set to 350 for 10 minutes.
- 2 cook meat and onion in skillet over medium heat until meat is browned.
- 3 drain and season with salt and pepper.
- 4 add undrained rotel tomatoes and beans,.
- 5 cook over medium heat 5 - 7 minutes, stirring occasionally, or until liquid is evaporated.
- 6 fill each tortilla with meat mixture, cheese and sliced green onions, if desired.
- 7 roll up and top with favorite toppings.
