Beef Ranchero Roll-ups

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 6 (8 -10 inch) flour tortillas, warmed
  • 1 lb ground beef
  • 1/2 medium onion, chopped
  • 1 (14 1/2 ounce) diced tomatoes with green chilies
  • 1 (15 ounce) can black beans
  • 1 1/2 cups cheddar cheese, shredded

Recipe

  • 1 warm tortillas in foil in oven set to 350 for 10 minutes.
  • 2 cook meat and onion in skillet over medium heat until meat is browned.
  • 3 drain and season with salt and pepper.
  • 4 add undrained rotel tomatoes and beans,.
  • 5 cook over medium heat 5 - 7 minutes, stirring occasionally, or until liquid is evaporated.
  • 6 fill each tortilla with meat mixture, cheese and sliced green onions, if desired.
  • 7 roll up and top with favorite toppings.
