Beef Tenderloin With Four Peppers

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 2 lbs beef tenderloin, center cut
  • 1 teaspoon dried oregano leaves, crushed
  • 1 teaspoon sweet paprika
  • 1 teaspoon salt
  • 1 teaspoon dried thyme leaves, crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed green peppercorn

Recipe

  • 1 heat oven to 425 degrees.
  • 2 in small bowl, combine seasoning ingredients.

  • 9 transfer roast to carving board; tent loosely with aluminum foil.
  • 10 let stand 15 minutes. (temperature will continue to rise approximately 10 degrees to reach 145 degrees for medium rare.).
  • 11 carve roast into 1/2-inch-thick slices.
