6 Can Spicy Soup - Day Ahead Recipe

Total Time: 1 hr 15 mins Preparation Time: 10 mins Cook Time: 1 hr 5 mins

Ingredients

  • 1 lb ground beef
  • 1/2 large onion, chopped
  • 2 cups water
  • 3 (19 ounce) cans minestrone soup
  • 1 (10 ounce) can original rotel
  • 1 (14 ounce) can pinto beans, drained
  • 1 (14 ounce) can corn, drained

Recipe

  • 1 brown ground beef with onion in large soup pot, drain any fat from cooked beef and place back in pot.
  • 2 add water, minestrone soup, rotel, pinto beans, and corn to pot. bring to a boil. reduce heat to low, cover, and simmer for 1 hour stirring occasionally.
  • 3 turn off burner and let sit for 1 hour to cool, place pot directly into refridgerator and cool for at least 2 hours to let flavors come together (preferably overnight.) reheat, serve, and enjoy!
