6 Can Spicy Soup - Day Ahead Recipe

Ingredients
- 1 lb ground beef
- 1/2 large onion, chopped
- 2 cups water
- 3 (19 ounce) cans minestrone soup
- 1 (10 ounce) can original rotel
- 1 (14 ounce) can pinto beans, drained
- 1 (14 ounce) can corn, drained
Recipe
- 1 brown ground beef with onion in large soup pot, drain any fat from cooked beef and place back in pot.
- 2 add water, minestrone soup, rotel, pinto beans, and corn to pot. bring to a boil. reduce heat to low, cover, and simmer for 1 hour stirring occasionally.
- 3 turn off burner and let sit for 1 hour to cool, place pot directly into refridgerator and cool for at least 2 hours to let flavors come together (preferably overnight.) reheat, serve, and enjoy!
