Beer Braised Sirloin Chili

Total Time: 6 hrs Preparation Time: 3 hrs Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 2 lbs top sirloin steaks, trimmed
  • 2 tablespoons canola oil
  • 4 limes, juice of
  • 8 garlic cloves, peeled and minced
  • 2 shallots, peeled and minced
  • 2 tablespoons cilantro, chopped
  • 1 tablespoon black pepper, coarsely crushed
  • 1 jalapeno pepper, stem seeds and membrane removed, then minced
  • 2 tablespoons kosher salt
  • 2 tablespoons canola oil
  • 2 large yellow onions, peeled and diced
  • 8 garlic cloves, peeled and minced
  • 2 tablespoons dried ancho chile powder
  • 2 teaspoons comino seeds, toasted and ground
  • 2 teaspoons coriander seeds, toasted and ground
  • 32 ounces bottled beer
  • 2 tablespoons kosher salt
  • 2 large poblano peppers, roasted peeled and seeded then diced
  • 2 limes, juice of
  • 1/2 cup green onion, chopped
  • 1 tablespoon cilantro, chopped

Recipe

  • 1 marinade:.
  • 2 cut sirloin in 4 pieces, about 8 ounces each.
  • 3 marinate in oil, lime, garlic, cilantro, black pepper and jalapeños for at least 3 hours (overnight is best).
  • 4 after marinating, grill meat to medium doneness on an open flame using hickory or mesquite, if possible. let meat cool, then dice into 1/2" x 1/2" cubes and set aside.
  • 5 chili:.
  • 6 in a large sauce pot, add oil and sauté onions and garlic until translucent.
  • 7 add in meat and cook on medium heat until most of the moisture is gone.
  • 8 add ancho chili powder, comino and coriander, then deglaze with beer.
  • 9 continue cooking on medium heat until meat is tender and sauce starts to thicken.
  • 10 add diced chilis and finish with kosher salt, lime juice, and garnish with green onions and chopped cilantro.
