Baked Kafta

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1 medium onion (grated)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup parsley (finely chopped)
  • 1/4 cup vegetable oil (for frying)
  • 2 zucchini, 6-8 inces long (sliced)
  • 2 medium potatoes (sliced)
  • 2 medium carrots (sliced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon cinnamon
  • 1/4 cup tomato paste
  • 3 cups water

Recipe

  • 1 set oven at 375.
  • 2 combine meat, onion, 1 tsp. salt, pepper and parsley.
  • 3 mix well.
  • 4 form into 1 1/2 inch balls then flatten into patties and fry slightly in a skillet with the oil, turning over once, (do not cook through).
  • 5 remove from skillet and place in a baking or casserole dish.
  • 6 combine remaining ingredients and add to meat patties.
  • 7 stir gently.
  • 8 bake for 45-60 minutes or until carrots are tender.
  • 9 serve with rice pilaf.
