Beef And Mushroom Risotto

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb lean ground beef
  • 1 (5 1/2 ounce) package risotto mix with garden vegetables
  • 1 1/2 cups sliced mushrooms
  • 1 cup chopped red bell pepper
  • 2 garlic cloves, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh basil

Recipe

  • 1 prepare risotto mix according to package directions.
  • 2 meanwhile in large nonstick skillet, brown ground beef, mushrooms, bell pepper and garlic over medium heat 8 to 10 minutes or until beef is no longer pink, breaking beef up into small crumbles.
  • 3 pour off drippings.
  • 4 season with salt and pepper.
  • 5 stir risotto into beef mixture.
  • 6 sprinkle with cheese and basil.
