Beef Tongue & Pinto Beans - Crock Pot

Total Time: 19 hrs Preparation Time: 1 hr Cook Time: 18 hrs

Ingredients

  • Servings: 4
  • 1 (3 lb) beef tongues
  • 2 (12 ounce) cans beer
  • 4 garlic cloves, peeled
  • 2 (15 ounce) cans pinto beans, drained
  • 1 (4 ounce) can diced green chilies
  • 8 ounces diced potatoes
  • 1/2 cup chopped onion

Recipe

  • 1 the night before rinse the tongue and slice in half lengthwise.
  • 2 place in crockpot.
  • 3 add whole peeled garlic cloves and onions.
  • 4 add both cans of beer.
  • 5 turn crockpot on low and cover.
  • 6 after the tongue has cooked approx 12 hrs take it out and allow to cool.
  • 7 remove skin and any visible fat.
  • 8 skim any fat off the top of the broth.
  • 9 cut up tongue and return to crock pot.
  • 10 add diced potatoes green chilies and drained beans.
  • 11 cover and allow to cook approx 5 more hours.
  • 12 its done when potatoes are fork tender.
  • 13 serve with warm tortillas or bread.
  • 14 add a dollop of sour cream to the top of each serving.
