Beef And Barley Soup With Wils Mushrooms

Ingredients

- 2 lbs stewing beef
- 3 quarts cold water
- 1 ounce dried mushroom
- 1/2 cup pearl barley
- 2 onions, chopped
- 2 celery ribs, sliced
- 2 carrots, chopped
- 1 teaspoon salt
- 1/2 pepper
- 1/2 teaspoon thyme
- 1 bay leaf
- 1 garlic clove, minced
- 2 tablespoons parsley
- 1 lb mushroom, sliced
- 28 ounces tomatoes
- 1 (10 ounce) can beef broth
Recipe
- 1 combine beef and water.
- 2 simmer for 1 hour skimming scum.
- 3 soak dried mushrooms in 1 cup warm water for 20 minutes.
- 4 strain liquid to remove grit.
- 5 chop mushrooms.
- 6 add dried mushrooms, liquid, barley, onions, celery , carrots and seasonings.
- 7 simmer another hour.
- 8 add pureed tomatos and fresh mushrooms.
- 9 simmer 30 minutes.
- 10 adjust liquid and seasonings if necessary.
