Almost Deerhead Chili Dogs

Total Time: 2 hrs 30 mins Preparation Time: 45 mins Cook Time: 1 hr 45 mins

Ingredients

  • Servings: 15
  • 3 lbs ground beef (80% lean)
  • 2 large onions, chopped
  • 1/2 cup chili powder, plus
  • 2 tablespoons chili powder
  • 1 1/2 tablespoons crushed red pepper flakes
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (6 ounce) can tomato paste
  • 2 (15 ounce) cans tomato sauce
  • 2 (15 ounce) cans beef broth
  • 1 cup plain yellow mustard
  • 1 large onion, chopped
  • hot dog, split almost in half and grilled
  • hot dog bun, toasted
  • plain yellow mustard
  • grated cheddar cheese
  • chopped onion

Recipe

  • 1 in a large pot, brown the ground beef and the two chopped onions, stirring frequently to ensure the beef is broken up; drain.
  • 2 add the remaining chili ingredients except the remaining chopped onion, mixing well.
  • 3 simmer over low heat for 1 hour and 45 minutes, stirring frequently.
  • 4 add remaining onion to the sauce and simmer an additional 15 minutes, stirring occasionally (chili freezes well for up to 3 months).
  • 5 assembly--place grilled hot dogs in toasted buns and top with mustard, chili, cheese, and onion.
  • 6 serve immediately.
