Beefy Chipotle Tacos

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 5
  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1 (14 ounce) can diced tomatoes and green chilies, undrained (i usually use rotel)
  • 1 -2 canned chipotle chile in adobo, chopped
  • 1/2 teaspoon reserved adobo sauce
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground oregano
  • 2 large garlic cloves, crushed
  • 1/4 teaspoon salt
  • 1/4 cup fresh cilantro, minced
  • 10 soft taco flour tortillas, warmed
  • shredded lettuce, shredded cheese, sliced green onions, sour cream, sliced black olives, diced avocado

Recipe

  • 1 1. cook beef and onion in a large skillet over medium heat until beef is browned
  • 2 2. drain
  • 3 3. stir in tomatoes with green chiles, chipotles, the reserved adobo sauce, chilli powder, cumin, oregano, garlic and salt
  • 4 4. cook over med-low heat 15 min, stirring occasionally
  • 5 5. remove from heat
  • 6 6. stir in cilantro
  • 7 7. for each taco, spoon about 1/3 cup beef mixture onto warm tortilla. top with desired toppings. enjoy!
