Beefy Chipotle Tacos

Ingredients

- 1 lb ground beef
- 1/2 cup chopped onion
- 1 (14 ounce) can diced tomatoes and green chilies, undrained (i usually use rotel)
- 1 -2 canned chipotle chile in adobo, chopped
- 1/2 teaspoon reserved adobo sauce
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground oregano
- 2 large garlic cloves, crushed
- 1/4 teaspoon salt
- 1/4 cup fresh cilantro, minced
- 10 soft taco flour tortillas, warmed
- shredded lettuce, shredded cheese, sliced green onions, sour cream, sliced black olives, diced avocado
Recipe
- 1 1. cook beef and onion in a large skillet over medium heat until beef is browned
- 2 2. drain
- 3 3. stir in tomatoes with green chiles, chipotles, the reserved adobo sauce, chilli powder, cumin, oregano, garlic and salt
- 4 4. cook over med-low heat 15 min, stirring occasionally
- 5 5. remove from heat
- 6 6. stir in cilantro
- 7 7. for each taco, spoon about 1/3 cup beef mixture onto warm tortilla. top with desired toppings. enjoy!
