Basic Beef Jerky

Ingredients
- 2 lbs beef steaks or 2 lbs beef roast
- 1/4 cup soy sauce
- 1 tablespoon worcestershire sauce
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon hickory liquid smoke
- 2 pinches curing salt (optional)
Recipe
- 1 trim most of the fat from the meat and cut into 1/8"-1/4" thick slices.
- 2 combine all the ingredients except the meat in a large bowl.
- 3 stir until the seasonings dissolve.
- 4 add the meat and mix until thoroughly coated.
- 5 let stand for at least 1 hour or cover and refrigerate for several hours.
- 6 shake off excess liquid and put the slices in the dehydrator.
- 7 dehydrate for 12 hours or until desired doneness at the highest temperature setting.
