Beef Tenderloin With Honey Peach Sauce

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 2 1/2 lbs beef tenderloin
  • 1 cup unsweetened pineapple juice
  • 1/2 cup lemon juice
  • 2 tablespoons cornstarch
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 teaspoon beef bouillon granules
  • 1 1/2 cups fresh peach slices, chopped

Recipe

  • 1 preheat oven to 425.
  • 2 sprinkle with salt and pepper.
  • 3 bake 30 to 40 minutes or until thermometer reads 140 for medium rare.
  • 4 remove from pan.
  • 5 cover and let stand 15 minutes.
  • 6 meanwhile for sauce, combine pineapple juice, lemon juice and cornstarch in saucepan.
  • 7 add butter, honey, and bouillon granules.
  • 8 cook and stir until thickened and bubbly.
  • 9 cook and stir 2 minutes longer.
  • 10 stir in peaches, heat through.
  • 11 thinly slice meat across grain.
  • 12 serve with sauce.
