Beef Tenderloin With Honey Peach Sauce

Ingredients

- 2 1/2 lbs beef tenderloin
- 1 cup unsweetened pineapple juice
- 1/2 cup lemon juice
- 2 tablespoons cornstarch
- 2 tablespoons butter
- 2 tablespoons honey
- 1 teaspoon beef bouillon granules
- 1 1/2 cups fresh peach slices, chopped
Recipe
- 1 preheat oven to 425.
- 2 sprinkle with salt and pepper.
- 3 bake 30 to 40 minutes or until thermometer reads 140 for medium rare.
- 4 remove from pan.
- 5 cover and let stand 15 minutes.
- 6 meanwhile for sauce, combine pineapple juice, lemon juice and cornstarch in saucepan.
- 7 add butter, honey, and bouillon granules.
- 8 cook and stir until thickened and bubbly.
- 9 cook and stir 2 minutes longer.
- 10 stir in peaches, heat through.
- 11 thinly slice meat across grain.
- 12 serve with sauce.
