Beefy Jalapeno Corn Bake

Ingredients

  • Servings: 9
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 -2 tablespoon fresh minced garlic
  • 1 small green bell pepper, seeded and chopped
  • 1/4 cup grated parmesan cheese (optional)
  • salt and pepper
  • 2 eggs
  • 1 (14 3/4 ounce) can cream-style corn
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 cup cornmeal
  • 3 tablespoons flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 4 cups shredded cheddar cheese, divided
  • 1 medium onion, chopped
  • 3 jalapeno peppers (seeded and chopped, or to taste)

Recipe

  • 1 set oven to 350 degrees.
  • 2 grease a 13x9 baking dish.
  • 3 in a skillet, cook beef with onion, garlic and bell pepper, until no longer pink, then season with salt and pepper; drain and add in parmesan if using; set aside.
  • 4 in a bowl, beat eggs, corn, milk and oil.
  • 5 combine the cornmeal, flour, baking powder and salt; add to egg mixture and mix well.
  • 6 pour half of the batter into a greased baking dish; sprinkle with 2 cups cheese; top with the beef, onion and jalapenos.
  • 7 sprinkle with remaining cheese; top with remaining batter.
  • 8 bake, uncovered for 55-60 mins or until a toothpick inserted into corn bread topping comes out clean.
  • 9 serve warm.
