Beefy Jalapeno Corn Bake

Ingredients

- 1 lb ground beef
- 1 medium onion, chopped
- 1 -2 tablespoon fresh minced garlic
- 1 small green bell pepper, seeded and chopped
- 1/4 cup grated parmesan cheese (optional)
- salt and pepper
- 2 eggs
- 1 (14 3/4 ounce) can cream-style corn
- 1 cup milk
- 1/2 cup vegetable oil
- 1 cup cornmeal
- 3 tablespoons flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 4 cups shredded cheddar cheese, divided
- 1 medium onion, chopped
- 3 jalapeno peppers (seeded and chopped, or to taste)
Recipe
- 1 set oven to 350 degrees.
- 2 grease a 13x9 baking dish.
- 3 in a skillet, cook beef with onion, garlic and bell pepper, until no longer pink, then season with salt and pepper; drain and add in parmesan if using; set aside.
- 4 in a bowl, beat eggs, corn, milk and oil.
- 5 combine the cornmeal, flour, baking powder and salt; add to egg mixture and mix well.
- 6 pour half of the batter into a greased baking dish; sprinkle with 2 cups cheese; top with the beef, onion and jalapenos.
- 7 sprinkle with remaining cheese; top with remaining batter.
- 8 bake, uncovered for 55-60 mins or until a toothpick inserted into corn bread topping comes out clean.
- 9 serve warm.
