Beef, Apple & Arugula Appetizers

Ingredients
- 1/2 cup mayonnaise
- 2 tablespoons finely-grated fresh horseradish
- 4 teaspoons fresh lemon juice
- freshly ground black pepper, to taste
- 2 tart green apples, cored,halved and cut into 1/4 inch slices
- 1 1/2 lbs roast beef, sliced thick,about 1/8 inch width
- 1/4 lb arugula, big stems removed
Recipe
- 1 combine the mayonnaise, horseradish, 2 teaspoons of the lemon juice and plenty of black pepper.
- 2 toss the apple thoroughly in the remaining lemon juice to prevent browning.
- 3 cut the roast beef into strips about 1-inch wide and 5-to 7-inches long.
- 4 place an apple slice and a few arugula leaves on the short end of each strip -- they should stick out on the edges -- and spoon about 1/2 teaspoon horseradish cream over.
- 5 roll up and spear with a toothpick.
- 6 wrap tightly and refrigerate until ready to serve.
- 7 serve cold.
