Beer Puffs With Corned Beef Filling

Ingredients
- 1 cup beer
- 1/4 lb butter
- 1 cup flour
- 1/2 teaspoon salt
- 4 eggs
- 2 cups corned beef, finely chopped (real or deli)
- 2 tablespoons onions, finely chopped
- 1/4 teaspoon horseradish
- 2 tablespoons mustard
- 2 teaspoons mayonnaise
Recipe
- 1 the day before: bring beer and butter to a boil. when butter is melted, add flour and salt. cook this over low heat, stirring constantly, until the mixture pulls away from the sides of the pan. remove from heat.
- 2 preheat oven to 450 degrees f.
- 3 beat in eggs one at a time until dough is shiny. drop by teaspoonfuls 1 inch apart on a lightly greased cookie sheet. bake for 10 minutes. reduce temperature to 350 and bake an additional 10 minutes. let cool. split with scissors and refrigerate until ready to fill.
- 4 prepare filling: combine all filling ingredients and chill.
- 5 when ready to serve spoon the filling into the puffs and put on a platter.
