Basic Beef Stew

Ingredients
- 1 tablespoon oil
- 2 lbs stewing beef, cut in 1-inch cubes
- 5 carrots, sliced
- 1 large onion, diced
- 1 garlic clove
- 3 celery ribs, sliced
- 3 potatoes, cubed
- 1 (28 ounce) can diced tomatoes
- 1 (28 ounce) can stewed tomatoes
- 2 bay leaves
- salt and pepper, to taste
Recipe
- 1 heat oil in large stock pot.
- 2 brown beef cubes and add the carrots, onion, garlic, celery, and potatoes in order as you chop them. this browning and sweating process really adds a wonderful flavor to the beef and veggies.
- 3 add the tomatoes and bay leaves and bring to a low simmer--as low as possible to still maintain a simmer.
- 4 cook for at least an hour, but longer is just fine and preferable.
