Barley Stroganoff Stew

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1 lb beef stew meat
  • 1/3 cup diced onion
  • 1 clove garlic, minced
  • 1 (10 ounce) can beef broth
  • 1 cup water
  • 1/2 cup pearl barley
  • 2 tablespoons ketchup
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 dash pepper
  • 2 cups fresh mushrooms, sliced
  • 1/2 cup sour cream

Recipe

  • 1 brown meat, onion and garlic in 2t.
  • 2 olive oil in a 3-4qt.
  • 3 saucepan.
  • 4 stir in remaining ingredients except mushrooms and sour cream.
  • 5 bring mixture to a boil.
  • 6 cover; cook over low heat for about 1 hour and 15 minutes.
  • 7 add mushrooms; continue cooking 15 more minutes.
  • 8 remove from heat and stir in sour cream.
  • 9 serve over hot cooked noodles or rice.
  • 10 crock pot variation: reduce water to 1/2cup.
  • 11 combine all ingredients except mushrooms and sour cream and place in crock pot.
  • 12 cover; cook on low heat 7-8 hours.
  • 13 stir in mushrooms; cover, cook on high heat for 15 minutes.
  • 14 turn off heat and stir in sour cream.
