Baked Sweet Potato "hash"

Ingredients
- 4 sweet potatoes (medium sized)
- 1 (8 ounce) roll of reduced fat jimmy dean breakfast sausage
- 1 sweet vidalia onion
- 2 teaspoons brown sugar
- 1 teaspoon minced garlic (dried)
- 1 teaspoon basil
- 1/4 teaspoon allspice
- 1/2 teaspoon cumin
- 1 dash salt and pepper
Recipe
- 1 preheat oven to 325.
- 2 spray a 13x9 inch brownie pan or casserole dish with cooking spray or line it with tin foil.
- 3 combine the garlic, basil, allspice, and cumin together in a small bowl. set aside.
- 4 wash and scrub the sweet potatoes ( you can peel them if you'd like but it's not necessary).
- 5 slice the sweet potatoes into cubes and place into the prepared baking dish.
- 6 slice the onion ( leave as large slices).
- 7 in a medium skillet, cook and brown the sausage over medium-low heat.
- 8 once the meat is thoroughly cooked through add the onions and the brown sugar (do not drain the meat as it is used for the sauteing).
- 9 saute for five minutes just so that the flavors mix.
- 10 spoon/scrape fry pan mixture into the baking dish of sweet potatoes- stir to combine.
- 11 pour the seasonings over the mixture and, again, stir to combine. make sure the seasoning has covered the entire contents of the pan.
- 12 place tin foil over the baking pan and set in the oven.
- 13 bake for 30 minutes or until the sweet potatoes are soft.
