Baked Sweet Potato "hash"

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 4 sweet potatoes (medium sized)
  • 1 (8 ounce) roll of reduced fat jimmy dean breakfast sausage
  • 1 sweet vidalia onion
  • 2 teaspoons brown sugar
  • 1 teaspoon minced garlic (dried)
  • 1 teaspoon basil
  • 1/4 teaspoon allspice
  • 1/2 teaspoon cumin
  • 1 dash salt and pepper

Recipe

  • 1 preheat oven to 325.
  • 2 spray a 13x9 inch brownie pan or casserole dish with cooking spray or line it with tin foil.
  • 3 combine the garlic, basil, allspice, and cumin together in a small bowl. set aside.
  • 4 wash and scrub the sweet potatoes ( you can peel them if you'd like but it's not necessary).
  • 5 slice the sweet potatoes into cubes and place into the prepared baking dish.
  • 6 slice the onion ( leave as large slices).
  • 7 in a medium skillet, cook and brown the sausage over medium-low heat.
  • 8 once the meat is thoroughly cooked through add the onions and the brown sugar (do not drain the meat as it is used for the sauteing).
  • 9 saute for five minutes just so that the flavors mix.
  • 10 spoon/scrape fry pan mixture into the baking dish of sweet potatoes- stir to combine.
  • 11 pour the seasonings over the mixture and, again, stir to combine. make sure the seasoning has covered the entire contents of the pan.
  • 12 place tin foil over the baking pan and set in the oven.
  • 13 bake for 30 minutes or until the sweet potatoes are soft.
