Beef A La Rydberg

Ingredients

- 3/4 lb trimmed filet of beef
- 3/4 lb raw potatoes
- 1 onion, finely chopped
- butter (for frying)
- salt, pepper
- chopped parsley
- worcestershire sauce
Recipe
- 1 cut the meat into 1/2-inch cubes.
- 2 cut the potatoes into 1/4-inch cubes.
- 3 soak potatoes in cold water for 20 minutes.
- 4 drain and wipe them with a towel.
- 5 in a heavy skillet, fry the potato in butter.
- 6 eventually add the onion and fry everything until golden.
- 7 add salt and pepper.
- 8 keep warm.
- 9 in another skillet, broil the meat cubes in butter on high heat.
- 10 they should get brown although rare inside.
- 11 add salt and pepper to taste.
- 12 serve immediately; the meat on one side of the plate and the potatoes on the other.
- 13 garnish with parsley.
- 14 worcestershire sauce on the table.
