Beef And Cornbread Squares

Ingredients

- 1 lb ground beef
- 1 tablespoon cornstarch
- 1 tablespoon dried onion
- 1 teaspoon chili powder
- 1/2 teaspoon garlic salt
- 1 (16 ounce) can tomatoes
- 1 (4 ounce) can diced green chili peppers, drained
- 3/4 cup all-purpose flour
- 2/3 cup cornmeal (i use the yellow)
- 2 teaspoons baking powder
- 2 beaten eggs
- 1 (8 3/4 ounce) can creamed corn
- 1/2 cup milk
- 3 tablespoons cooking oil
- 1 cup cheddar cheese, shredded
Recipe
- 1 brown ground beef, drain fat.
- 2 stir in next 4 ingredients, then stir in undrained tomatoes and chili peppers. cook and stir until thick and bubbly.
- 3 combine flour, cornmeal and baking powder.
- 4 combine eggs, corn, milk and oil. stir into dry ingredients.
- 5 add cheese. stir until moistened.
- 6 spread half of batter into a greased 9x9x2-inch pan.
- 7 spoon mixture over that.
- 8 top with remaining batter.
- 9 bake at 375°f about 30 minutes or until golden brown.
- 10 let stand 5 minutes. cut into squares.
