Beef And Cornbread Squares

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1 tablespoon cornstarch
  • 1 tablespoon dried onion
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic salt
  • 1 (16 ounce) can tomatoes
  • 1 (4 ounce) can diced green chili peppers, drained
  • 3/4 cup all-purpose flour
  • 2/3 cup cornmeal (i use the yellow)
  • 2 teaspoons baking powder
  • 2 beaten eggs
  • 1 (8 3/4 ounce) can creamed corn
  • 1/2 cup milk
  • 3 tablespoons cooking oil
  • 1 cup cheddar cheese, shredded

Recipe

  • 1 brown ground beef, drain fat.
  • 2 stir in next 4 ingredients, then stir in undrained tomatoes and chili peppers. cook and stir until thick and bubbly.
  • 3 combine flour, cornmeal and baking powder.
  • 4 combine eggs, corn, milk and oil. stir into dry ingredients.
  • 5 add cheese. stir until moistened.
  • 6 spread half of batter into a greased 9x9x2-inch pan.
  • 7 spoon mixture over that.
  • 8 top with remaining batter.
  • 9 bake at 375°f about 30 minutes or until golden brown.
  • 10 let stand 5 minutes. cut into squares.
