Beef And Black Bean Burritos

Ingredients

  • Servings: 6
  • 1 lb beef round steak
  • 16 ounces black beans, canned
  • 4 large tomatoes
  • 1/2 cup onion
  • 4 ounces green chilies
  • 3 tablespoons cilantro
  • 1 garlic clove
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon sage
  • 1/2 teaspoon cayenne pepper

Recipe

  • 1 thinly slice the beef round, then cube into 1/4 inch cubes.
  • 2 rinse and drain the black beans.
  • 3 prepare the salsa fresca by blending the remaining ingredients in a food processor.
  • 4 take 1/4 of the salsa fresca and mix it with the cubed meat.
  • 5 take 1/4 of the salsa fresca and mix it with the black beans.
  • 6 allow the meat and beans to marinate for 45 minutes.
  • 7 cook the meat in a skillet over a high heat, until the meat is no longer pink and all the liquid has evaporated.
  • 8 microwave the beans for 1 minute on high, or until hot.
  • 9 serve with warm tortillas.
