Bit Of Italy Beef Roll-up

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 1 -1 1/2 lb beef flank steak
  • 1/3 cup mozzarella cheese, shredded
  • 1/3 cup parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon italian seasoning
  • 2 garlic cloves, finely chopped (i mince mine)
  • 1 tablespoon olive oil

Recipe

  • 1 heat oven to 350°f trim fat from beef flank steak. place steak between two pieces waxed paper and pound to 1/2 inch thickness.
  • 2 sprinkle mozzarella and parmesan cheeses, parsley, seasoning and garlic over beef - just to within 1 inch of the edges.
  • 3 roll beef up tightly lengthwise and tie tightly with string in 3-4 places to secure.
  • 4 place in an ungreased square baking dish (8x8x2 works well) and then brush with the olive oil.
  • 5 cover and bake 45-50 minutes or until your desired level of doneness.
  • 6 let stand 10 minutes before cutting into 1 inch slices prior to serving.
