Beef & Vegetables

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs top sirloin steaks, cut into 1 inch pieces
  • 2 tablespoons olive oil
  • 1/3 medium onion, chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 2 medium garlic cloves
  • 1 beef bouillon cube
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 3 cups assorted fresh vegetables, cut up

Recipe

  • 1 heat the olive oil in a large pan then add the beef & onions. cook the beef until all the sides are brown.
  • 2 add enough water to the pan to cover the beef. stir in all the other ingredients except for the vegetables. bring to a boil, then reduce heat to medium, cover & simmer for 60 minutes (adding more water if needed).
  • 3 once the beef is tender add the vegetables to the sauce. cover with the lid & simmer for another 10-15 minutes. the mixture is done once the vegetables are soft.
  • 4 serve over rice or couscous.
  • 5 note: i used zucchini, cauliflower, carrots, green peppers, & parsnip as my vegetables.
