Beef & Vegetables

Ingredients
- Servings: 4
- 1 1/2 lbs top sirloin steaks, cut into 1 inch pieces
- 2 tablespoons olive oil
- 1/3 medium onion, chopped
- 1/4 cup fresh parsley, finely chopped
- 1 bay leaf
- 1 tablespoon tomato paste
- 2 medium garlic cloves
- 1 beef bouillon cube
- 2 teaspoons ground cumin
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 3 cups assorted fresh vegetables, cut up
Recipe
- 1 heat the olive oil in a large pan then add the beef & onions. cook the beef until all the sides are brown.
- 2 add enough water to the pan to cover the beef. stir in all the other ingredients except for the vegetables. bring to a boil, then reduce heat to medium, cover & simmer for 60 minutes (adding more water if needed).
- 3 once the beef is tender add the vegetables to the sauce. cover with the lid & simmer for another 10-15 minutes. the mixture is done once the vegetables are soft.
- 4 serve over rice or couscous.
- 5 note: i used zucchini, cauliflower, carrots, green peppers, & parsnip as my vegetables.
