Beef Chili

Ingredients

  • Servings: 6
  • 1/4 cup onion, chopped
  • 1 stem celery, chopped
  • 4 large mushrooms, quartered
  • 1 green bell pepper, chopped
  • 1 tablespoon olive oil
  • 28 ounces diced tomatoes
  • 15 ounces chili, no beans
  • 8 ounces tomato sauce
  • 15 ounces red kidney beans
  • 1 tablespoon chili powder
  • 1 1/2 lbs lean ground beef
  • 1 garlic clove, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Recipe

  • 1 in a large dutch oven, saute onion, celery and beef in olive oil over medium-high heat until meat is brown and veg is tender.
  • 2 add garlic and chili powder, stir 30 seconds.
  • 3 add chili, green bell pepper, tomatoes, beans, tomato sauce, salt and pepper, bring to a boil.
  • 4 reduce to a simmer, cover and simmer for 1 hour.
  • 5 add mushrooms, simmer uncovered for 15 minutes.
  • 6 serve with cheddar cheese and sour cream if desired.
