Bean Soup With Sausage

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 2 italian sausages, diced
  • 1 leek, sliced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery ribs, sliced
  • 3 tablespoons all-purpose flour
  • 2 beef bouillon cubes
  • 1/2 cup small shell pasta
  • 1 (400 g) can four-bean mix
  • 1 1/2 liters water

Recipe

  • 1 heat the oil in a large saucepan and add sausage. cook over medium heat for 5 minutes until golden. remove from sauce pan and set a side.
  • 2 add leak, garlic, carrot and celery to the saucepan and cook for 5 minutes.
  • 3 add flour and cook for 2 minutes. add stock cubes and 1 1/2 liters of water.
  • 4 bring to the boil reduce heat and simmer for 20 minutes.
  • 5 add pasta and beans and cook for 8 to 10 minutes until pasta is al dente.
  • 6 return the sausage to the soup and season with salt and pepper to your taste.
