Arizona Southwest Rice Pilaf

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 cup long-grain rice, uncooked
  • 1 (14 1/2 ounce) can beef broth
  • 1 tomato, diced
  • 1 large jalapeno chile, minced (or 1-4 oz. can)

Recipe

  • 1 heat olive oil in a heavy large skillet over medium-high heat.
  • 2 add onion, red pepper, carrot and celery.
  • 3 saute until vegetables begin to soften, about 7 minutes.
  • 4 add rice and stir to coat well.
  • 5 add broth and bring to a boil.
  • 6 cover skillet, reduce heat to low and simmer until rice is tender and broth is absorbed, about 20 minutes.
  • 7 mix in tomato and jalapeno; heat through.
  • 8 serve.
