Beefed-up Roast Beef Sandwiches

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • 5 cups leftover roast beef, thinly shredded
  • 1 onion, sliced
  • 1 1/2 cups mozzarella cheese, shredded
  • 3/4 cup parmesan cheese, grated
  • 3 tablespoons butter or 3 tablespoons margarine
  • 12 hoagie rolls or 12 buns, of your choice

Recipe

  • 1 melt 1 tbsp butter in frying pan.
  • 2 separate onion slices into rings and fry till tender and caramelized, set aside to cool slightly.
  • 3 toast buns till desired crispness, butter when done.
  • 4 layer on roast beef, onions and top with a mixture of each cheese.
  • 5 *at this point they can be wrapped in tinfoil and placed in a 350 degree oven for about 5 minutes to let the cheese melt.
  • 6 enjoy! and it's really good with au jus!
