Beefed-up Roast Beef Sandwiches

Ingredients
- 5 cups leftover roast beef, thinly shredded
- 1 onion, sliced
- 1 1/2 cups mozzarella cheese, shredded
- 3/4 cup parmesan cheese, grated
- 3 tablespoons butter or 3 tablespoons margarine
- 12 hoagie rolls or 12 buns, of your choice
Recipe
- 1 melt 1 tbsp butter in frying pan.
- 2 separate onion slices into rings and fry till tender and caramelized, set aside to cool slightly.
- 3 toast buns till desired crispness, butter when done.
- 4 layer on roast beef, onions and top with a mixture of each cheese.
- 5 *at this point they can be wrapped in tinfoil and placed in a 350 degree oven for about 5 minutes to let the cheese melt.
- 6 enjoy! and it's really good with au jus!
