Beef Medallions In Beer Sauce

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 beef medallions
  • 1 quart beef stock
  • 1 bunch green onion, diced
  • 1 teaspoon fresh garlic, minced
  • 16 ounces budweiser beer
  • 1/2 lb sliced mushrooms
  • 1 cup fresh tomato, diced

Recipe

  • 1 saute medallions to rare.
  • 2 add 6 ounces of budweiser, lower to medium heat for 2 minutes.
  • 3 add mushrooms, green onions and garlic and saute until tender.
  • 4 add beef stock and tomatoes, cook to preferred temperature.
  • 5 add remaining 10 ounces of budweiser and lightly thicken with a roux.
  • 6 chabear01 basic roux is a good basic roux recipe the extra can be frozen.
