Beef Medallions In Beer Sauce

Ingredients

- 8 beef medallions
- 1 quart beef stock
- 1 bunch green onion, diced
- 1 teaspoon fresh garlic, minced
- 16 ounces budweiser beer
- 1/2 lb sliced mushrooms
- 1 cup fresh tomato, diced
Recipe
- 1 saute medallions to rare.
- 2 add 6 ounces of budweiser, lower to medium heat for 2 minutes.
- 3 add mushrooms, green onions and garlic and saute until tender.
- 4 add beef stock and tomatoes, cook to preferred temperature.
- 5 add remaining 10 ounces of budweiser and lightly thicken with a roux.
