Beef Soup With Red Wine

Ingredients

- 1 quart beef stock
- 1 lb lean stewing beef, cubed
- 6 ounces canadian bacon, diced
- 1 (8 ounce) can tomato juice
- 1/2 cup dry red wine
- 4 cups red potatoes, cubed
- 1 cup chopped onion
- 1 cup sliced mushrooms
- 1/2 cup sliced carrot
- 1/2 cup sliced celery
- 1 garlic clove, minced
- 1 1/2 teaspoons dried thyme
- 2 bay leaves
- salt and pepper
Recipe
- 1 combine all ingredients, except salt and pepper in slow cooker.
- 2 cover and cook on low 6-8 hours.
- 3 discard bay leaves; season to taste with salt and pepper.
