Ingredients
- 1 lb minced mirepoix
- 2 ounces vegetable oil
- 1 teaspoon dried thyme
- 2 teaspoons dried marjoram
- 2 teaspoons salt
- 1 1/2 teaspoons pepper
- 1 1/2 teaspoons breadcrumbs
- 2 beaten eggs
- 1 fluid ounce worcestershire sauce
- 3 1/2 ounces tomato juice
- 3 1/2 lbs ground beef
- 10 pieces sliced bacon
Recipe
- 1 1. sauté the mirepoix in the oil until tender. add the herbs, salt and pepper. remove from the pan and refrigerate thoroughly.
- 2 2. place all of the ingredients in a mixing bowl. mix well until it binds.
- 3 3. form and cook a test piece. adjust seasoning and consistency if necessary.
- 4 4. scale into equal sized portions and flatten like a hockey puck. wrap each steak with a strip of bacon and secure with a toothpick.
- 5 5. mark on a well-oiled grill and then finish in a 325°f oven, 10-15 minutes.
