Award Winning Chef : Jamaica's Ajeen Beckford Grilled Ochie Stea

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 lb minced mirepoix
  • 2 ounces vegetable oil
  • 1 teaspoon dried thyme
  • 2 teaspoons dried marjoram
  • 2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 1 1/2 teaspoons breadcrumbs
  • 2 beaten eggs
  • 1 fluid ounce worcestershire sauce
  • 3 1/2 ounces tomato juice
  • 3 1/2 lbs ground beef
  • 10 pieces sliced bacon

Recipe

  • 1 1. sauté the mirepoix in the oil until tender. add the herbs, salt and pepper. remove from the pan and refrigerate thoroughly.
  • 2 2. place all of the ingredients in a mixing bowl. mix well until it binds.
  • 3 3. form and cook a test piece. adjust seasoning and consistency if necessary.
  • 4 4. scale into equal sized portions and flatten like a hockey puck. wrap each steak with a strip of bacon and secure with a toothpick.
  • 5 5. mark on a well-oiled grill and then finish in a 325°f oven, 10-15 minutes.
