Bistecca Alla Fiorentina

Ingredients

- 2 (1 1/3 lb) porterhouse steaks or 2 (1 1/3 lb) beef t-bone steaks, 1 inch thick
- 1/4 cup extra virgin olive oil, divided
- 1 1/2 teaspoons kosher salt
- 1 1/2 teaspoons fresh ground black pepper
- 2 -3 lemon wedges
Recipe
- 1 trim excess fat from steak.
- 2 allow to stand at room temperature for 30-45 minutes before grilling.
- 3 brush or spray both sides of steaks with 2 tablespoons of the olive oil.
- 4 season with salt and pepper, pressing into meat.
- 5 grill over direct high heat until the internal temperature reaches 145 degrees f for medium rare, (8-10 minutes), turning once halfway through grilling time.
- 6 remove from grill, squeeze the lemon wedges over the top, and drizzle with remaining olive oil.
- 7 allow to rest for 5 minutes before slicing.
- 8 enjoy.
